TRADITIONAL June 2011 OAMM Menu (OAMC, Once A Month Cooking, Freezer Cooking)

cooking-link1

Summer is rolling in, the kids are (or soon will be!) out of school, and warm weather activities are here! If you are anything like me, cooking is one of the last things you want to do during the summer months. However, our families still need to eat, so I’ve compiled a menu with several easy-to-serve meals to cut down on your cooking time, and certainly the use of the oven during June.

I hope you enjoy these meals as much as our early readers/cooks have. If you are new and not sure how to get started, read here. For frequently asked questions visit here. And there are several other helpful links under the Helpful Hints/Resources section below to help you on your cooking journey. Good luck!

Menu

  • Included below are the menu items that we will be preparing as part of our Once A Month Cooking (OAMC) BIG DAY. In the printable June 2011 Recipe Cards the menu items are listed as single, double, or quadruple depending on how much we need to make on the BIG DAY. The recipes linked below are ONLY for the single batch, to see the amounts we are making on the OAMC BIG DAY you will need to visit the printable June 2011 Recipe Cards.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cooks:

  • Diane Andrews – I’m a mom of 6 – 2 bio kids and 4 foster kids.  We live in the boonies about 40 minutes outside of town.  Our blog is joshuanora.blogspot.com.
  • Heather Allen – I’m a work at home mom (nurse medical coder) to 3 boys (2) 9′s and a 14, and a sweet hubby of 24 years! I am a veteran bulk/freezer cook whose love of cooking and spending time in the kitchen trying new recipes, has the benefit of feeding this constantly hungry herd!
  • Elizabeth Curry – I have 2 daughters 10 and 8.  I have been married for 13 years.  I am a teaching assistant for special needs children in elementary school.  I love to cook  and make new things.  I like the OAM cooking so that we try new recipes and for  the ease of meal planning. OAM cooking also helps me stay on grocery budget.

  1. Thanks for linking my ranch burgers–what a great site!

I noticed on the recipe card under the chopping amounts, the amount of chicken needed to be cooked the night before doesn’t change when you enter the different amount of people cooking for. Thanks for the great website this is my 3rd month freezer cooking and I love it. I’m telling everyone I know. May God Bless you and all that help!!

  3. Thanks for including one of my recipes! I hope you really enjoy the pork kabobs!

  4. I’m so excited to see how you prepare the baked veggie sandwiches for the freezer! Those are a favorite at our place.

This was my first month cooking. Maybe I missed something, but I cooked for 2 people, changed the documents, and I have SOO much chicken left over. I cooked and shredded the 2 lbs in prep, but the only thing that called for shredded chicken was the burritos…what did i miss? I ended up freezing 1.5 lbs of chicken that I didnt use, but dont want to make this mistake again…any suggestions?? My grocery list said to buy 6 lbs of chicken and in reality probably only used 4ish.

I just made the baked veggie sandwiches and they were a HUGE hit at our house!! I think the next time I make it I’m going to add some crumbled bacon to the filling and brush the top crust with some melted garlic butter, just to appease my hubby’s meat cravings and unnatural love of garlic lol. Thanks so much for your site, the recipes are all delicious and you give me back my evenings to play with my kids instead of being a slave to my kitchen.

So i am trying this for the first time this month and have a concern. For all the meat, on the recipe cards its say that all the meat can be frozen beforehand if handled properly. ????? I have always done and been told that if you freeze meat, then defrost it, it CAN NOT be refrozen…Can you please explain? Or has there been an article on this before??
    Thanks!

Hey there, this will be my first time doing almost a whole menu, I am having a baby in about 4-5 weeks so I wanted to get some meals prepared. I am super excited but in getting prepared and reading through all the recipes, grocery list and directions I did find a couple little mistakes.

In the instructions there is no where for the Bacon Cheeseburger Chicken recipe but I figured since this is just a quick assemble and freeze dinner I would just stick it in whereever. And then as I was going through the grocery list a lot of the numbers didn’t match up with the actual ingredients needed for my recipes. I deleted a couple ingredients and recipes so I was going through the amounts anyway to make sure I didn’t buy anything I didn’t need but in doing that I noticed a lot of the amounts were off. I don’t know if that’s a computer glitch or what, but I just thought I would let you know.

I plan on blogging about my freezer cooking experience which I plan on doing this weekend since it’s going to be super rainy here all weekend.

Thanks, I absolutely love your site!

I sws thinking about trying to do my first-ever OAMCooking on Saturday using this June plan. I clicked on a few of the recipes and my mouth started watering just THINKING of eating some of these recipes!!! Especially the Bacon Cheeseburger Chicken! :-) When I read over the cooking plan (four different times to make sure I wasn’t just skipping over anything), there was no bacon cheeseburger chicken listed? Could you please look over the plan and shopping list to make sure this is included??? As a newbie, I really have no idea when I would need to freeze it or how much of anything I need to buy, so your help would be GREATLY appreciated!!! Thank you!!! :-)

I just finished this particular menu. Once I got near the end of the work list I noticed that the Bacon Cheeseburger Chicken is not actually on the work list at all. You included the recipe, but it is not included on the list.

    • Tricia says:

Good to know, we will get that added.

    • Connie says:

Thanks, Ben, for bringing that up again. I hadn’t gotten any response from my post the day before about the BCC… Can you tell me if the ingredients were on the shopping list? And only the recipe was left off the work list? Or do I need to figure up the amounts and add them to the shopping list myself? THANK YOU for your response! :-)

      • Tricia says:

Connie, I had responded but not heard back from you. It is on the recipe cards and in the grocery list, just forgot on the instructions list. It is an easy to pull together one near the end.

This menu was great. It was my first time cooking for a month. I prepared this menu a few weeks before my son was born. It has been very helpful having meals ready to heat up.
