TRADITIONAL September 2011 OAMM Menu (OAMC, Once A Month Cooking, Freezer Cooking)

September! My favorite month. Weather cools down, kids go back to school, and fall approaches. This is the time of year I crave routine, and filling my freezer is a good way to insure I have plenty of meals ready for my family for those busy nights filled with homework, soccer practice, PTA meetings, etc.

And nothing sounds more “Fall” to me then hearty stews, apples, fresh baked goods and comfort crockpot meals. What about you? I hope that you love these simple to freeze yet hearty fall meals.

These customized labels are designed specifically for the September 2011 Once A Month Mom Menu. They contain not only the name of the dish but also the serving instructions for preparing the dish on your serving day. They make preparation of the dishes hassle free.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cooks:

    This is my first time working with the recipe cards (and trying OAMC). I have downloaded it as an Excel spreadsheet, but I can’t see all the recipe directions. Some have ##### in the cell. How can I fix this? Thanks!

    Hi! I just downloaded de recipy card so I can planned my recipies and I noticed that for the scones, when I put 6 in the number of persons, the quantities does’nt change, is this normal? The number of container does change though but not the ingresients quantities. Thank’s

      This is a very valid question and I apologize for my late reply. It should have changed and when looking I realized there was a formula problem for anyone that was cooking more than 4 servings. I have fixed that but you will want to go back and reprint cards for the Scones and Pizza Muffins as well as double check the chopping amounts. The amounts on the grocery list are written correctly so you should have purchased enough for the serving amount you were doing. Sorry about that and thank you for bringing that to our attention.

    Just so you know. The Traditional Menu isn’t coming through on the RSS feed. It hasn’t been downloading for the past couple of months. I only noticed because I save the menus in my Outlook file, and I don’t have the traditional menu. :)

    is it possible in the future to list cooking utensils/items needed such as # of pots, bowls and cookie/muffin trays? I know that I only have a limited number of things – especially cookie and muffin trays and it would be helpful to borrow them in advance rather than having to keep washing them throughout the day.

      Hi Cindy :)
      That would probably be very helpful but unfortunately it would be difficult to predict since everyone is cooking different serving amounts. Even though it may seem like a pain to wash throughout the day, I do the same, and find it actually helps me feel less overwhelmed as I don’t have such a large mess of dishes at the end of the day.

    Love your site and I am going to give this a try with some girl friends in a couple of days. Typically what do you freeze casseroles in? Do you use the tin pans with foil on top or lids or something else?

      Pam speaking here, for ease I usually use the tin pans with foil on top or a lid (if it comes with one). But some readers have also suggested lining your regular baking dishes with foil, and then freeze. When the casserole is frozen, lift the foil out, wrap the rest of the way in foil, and place in a freezer bag.

    I made a lot of the recipes for this month’s menu and they are delicious so far! I had a question about the Green Chile egg muffins. They were great fresh, but when we froze and reheated them the texture was weird. They were sort of wet and soggy and spongy. Anybody have any tips or something I could do different next time I freeze and egg dish? Thanks.

        I’m not sure where we went wrong with our chipotle lime recipe this month. We cooked for 10 and I’m not sure if the spice portions where correct on our recipe cards. We even cut the chipotle seasoning down by 1/3rd but the soup is REALLY spicy! Is there anything you can suggest to cut the spice? We froze in single serve portions…so any suggestions on an easy remedy would be appreciated!

    On the cream cheese chicken I had set the serving size for
    8 but only on the cream cheese chicken page it changes the
    serving size down to five. Any suggestions?

    I’m thinking of making the Green Chile and Egg Muffins, but instead of muffins I was thinking of making them in a loaf pans for family style breakfast. I have a couple of questions. Couldn’t I freeze this raw for a fresher taste the morning of? Can eggs be frozen raw in casseroles for later baking? Thanks!

      Yes you could do in a loaf pan and you could freeze before cooking. Raw eggs to fine. They might be a little watery though. We usually recommend baking items like these from frozen so that there is less water on them but you need to bake them longer.
