Tricia’s Menu Plan Monday – April 6


This will be a busy week for us. We have something planned every night this week. Monday – date night, Tuesday – dinner with friends, Wednesday – House Church, Thursday – helping with a garage sale, dinner with friends, Friday – helping with a garage sale, Saturday – NOTHING, Sunday – Easter. So we are usually a lot of our freezer meals and keeping it simple this week when we are home.
Also – we are looking for some great grill recipes if you would like to share one of your family favorites.
Menu Plan Monday
Monday – Shepherd’s Pie, Salad, dinner rolls
Tuesday - Mandarin Orange Chicken, Veggie/Pasta mix, salad
Wednesday – House Church – Dinner with Church family
Thursday – Out to Dinner with Friends
Friday – Leftovers
Saturday – Lunch – Baked Chicken Fingers atop a salad, fruit
Dinner -
Sunday – Breakfast – Farmer’s Casserole
Lunch – Easter dinner with family
Dinner – Post-Easter dinner with other family

Great menu. I may have to use that Mandarine Orange Chicken recipe one of these days as I’m always looking for a new way to prepare chicken.
As for grill recipes: one of our favorites is grilled salmon. Living in Alaska we always have some in the freezer. We thaw 1-2 fillets, mix mayo with various spices (hubby like lemon pepper and I like dill), place on a sheet of heavy duty foil then placed on a med grill. Cook till salmon flake easily.
We love to grill at our house. I love flank steak or skirt steak. I prepare a marinade in a zip-loc bag and throw in grated ginger, 2 chopped garlic cloves, 2 TB soy sauce, 2 TB chopped green onions, salt and pepper and a splash of white wine (optional, but it really tenderizes the meat).
