Unstuffed Bacon-Beef Mushrooms
Stuffed peppers, stuffed tomatoes, stuffed mushrooms – I like them all! Sometimes, though, I want the taste of stuffed veggie without the work. This is especially true on a once a month cooking day. That’s why I revamped an old recipe and turned it into Paleo approved Unstuffed Bacon-Beef Mushrooms!
Unstuffed Bacon-Beef Mushrooms: Paleo Approved

- 2 pounds “clean” bacon
- 2 Tablespoons coconut oil
- 2 medium onions, diced
- 2 pounds ground beef, pastured, grass-fed, and grass-finished preferred
- 9 cups mushrooms, sliced
- 1/2 cup beef broth, preferably homemade
- 1 cup coconut milk, full-fat
Put bacon on a foil lined baking pan and bake in 350 degree oven until crispy. While bacon is cooking, melt coconut oil in a large frying pan over medium-high heat. Add diced onions and sauté until they begin to caramelize. Add grass fed ground beef and cook until brown. Drain fat if needed. Add mushrooms to the mixture until they just start to soften. Add half of beef broth and stir for 30 seconds. Add coconut milk and cook, stirring constantly, until liquid reduces almost completely. Add remaining beef broth to the pan. Bring to a boil, stirring constantly, then reduce the heat to medium and simmer until slightly thickened. Mix in bacon.
Place mixture in freezer bag and lay flat to freeze: To serve: Reheat and enjoy!
