We’re reveling in those beautiful green Spring vegetables in our CSA box, so this month’s recipes celebrate broccoli, cabbage and kale: Broccoli Apple Soup, Chickpea (and Broccoli) Brown Rice Burger, Beef Broccoli Pizzadillas, Stuffed Cabbage Casserole and Quinoa and Kale Mini Crustless Quiches. Quinoa also plays a central role as a complete protein star as the Vegetarian menu continues its theme of being easy to mentally digest for meat-eaters through Lent.  The quinoa-tastic meals include Chocolate Chip Quinoa Muffins and those Quinoa and Kale Mini Crustless Quiches. Don’t forget to savor that fresh roadside or farmer’s market sweet corn by partaking in Thai Coconut Corn Soup.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

    Thanks for featuring one of my recipes, but the Deconstructed Stuffed Cabbage Casserole is not vegetarian; it has ground beef.

    Thank you so much for this! I have been wanting to get into freezer cooking, but most of what I have seen so far has involved large amounts of meat. These recipes look delicious, and I am super excited to give this a try. Thank you for putting this together!

    Just found your website and love it. I was wondering if you ever do vegan meals? It wouldn’t need to be an entire menu, but maybe a search option to pick out the vegan options? Thanks!

      Casey, that is an interesting suggestion (the searchable vegan) that we hadn’t considered. I will look into the possibility. We are going to do a Mini Menu for Vegans but it will be mid-Summer before we will have it ready. Stay tuned.

    This may be a silly question, but for the stuffed cabbage casserole where it says 2 C brown rice, cooked, is that 2 C of dry brown rice cooked into however many cups it ends up being, or 2 C of rice measured after it’s been cooked?

    And while I’m here . . . I tried the creamy artichoke lasagna and it was SO GOOD! I’m curious about a couple of the amounts though. I put in 4 for the # of people and it says 6 dried lasagna noodles, which didn’t really make sense to me. Also, is there somewhere that tells how much .17 cups all-purpose flour is. That is an unusual amount. (I sort of guessed . . .)

      That rice is about 1 cup, then you cook it and it turns into 2 cups of rice (measured after).

      Awesome about the lasagna! I’ll check into that noodle number, but I think that’s right because it’s split into 2 small pans.

      And .17 cups flour is about 3 tablespoons. We have a little measurements conversions chart at the bottom of each recipe post now, but that one’s basically between 1/8 cup and 1/4 cup, so it’s not specifically listed there.
