Potato Kale Soup

The vegetarian menu this month is designed not only for vegetarians and vegans, but also for those of you who will be eating meatless later this month for Lent (Ash Wednesday falls on February 22 this year). The menu this go-around is filled with vegetables, grain proteins and beans and has only one meat substitute (mock ground beef), which is considered a great “beginner” mock meat. It tends to take on the flavor of the sauce in which you serve it (in this case it’s spaghetti sauce in the Simple “Meaty” Vegan Spaghetti Sauce). Breakfasts include a couple of simple muffin recipes (including Lemon-Poppyseed Muffins ) and a hearty savory-sweet blend breakfast poundcake using seasonal citrus fruit (Tangerine-Ricotta Poundcake).

Seasonal cauliflower makes a grand showing in Aloo Gobi Curry while kale and spinach are highlights in the Potato Kale Soup and Spinach Empanadas. And if you’re Looking for a Valentine’s Day vegan treat, you can try Cupid’s Favorite Quinoa, filled with roasted tomatoes.

  • The Vegetarian menu is designed for you to enter the NUMBER OF PEOPLE you are cooking for. The menu will yield you approximately 6-10 breakfasts, 8 lunches and 16 dinners. Throughout the month you will be eating each entree 2 times. No, this is not enough to feed you for every meal, but it should be enough to get you most of the way, after all, we still do eat out or eat with friends on occasion. If you are willing to eat the same meals up to 4 times each month (lunches and dinners) you can double the number of people that you are cooking for and you will get the quantities needed for each. Labels

These customized labels are designed specifically for this menu. They contain the name of the dish and serving instructions for preparing the dish on your serving day. They make preparation of the dishes hassle free and staying to your eating plan a cinch.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

    Hubby and I cooked all day Saturday and Sunday, trying the OAMM system for the first time. I was exhausted by Sunday night. Last night (Tuesday) I got home from work, pulled out the thawed zucchini enchiladas with accompanying bags of cheese and sauce. Baked it for 25 minutes and sat down to dinner with the family. The brown rice we put on a timer in the steamer was done right on time.

    That one flawless meal was worth every minute I spent in the kitchen over the weekend! It’s an amazing time saver. Can’t wait for potato leek soup tonight. Bread on a timer in the breakmaker, too!

    I spent today cooking this menu and for the most part everything came out great. I did however have about 5 pounds of leftover diced potatoes. Any idea why the shopping list did not align with the ingredient list? Also was there a liquid missing from the Aloo Gobi curry? It did not look at all soupy like the picture and even though I cooked for 4, the dish will barely feed 4 1x. I went to the original website and could not find any clues there either. Thanks for the great website.

      Well, we are so glad you cooked the menu and hope that you do enjoy it. I am not sure of why you had a problem with those items but I will certainly look into them. If I find any clues I will let you know.

      I suspect that the reason you had potatoes left over is that it’s hard to know how many cups of potatoes you will get from a pound. I searched the internet and it says anywhere from 2 to 5 cups from a pound. The recipes for 1 person call for 3.625 cups, but 3 pounds are listed on the ingredient list…this probably could be reduced.

      I couldn’t figure out the liquid thing either…otherwise the dish looks lovely, so I hope someone does. I did look up other Aloo Gobi recipes on the net, and most use 1/4 cup water, but in the pictures come out very thick — not soup like, with the exception of one on allrecipes (http://allrecipes.com/recipe/alicias-aloo-gobi/) which uses a can of coconut milk. They also tend to use a whole head of cauliflower for 4 people, rather than a half.

    Thanks Lisa. I realize it can’t be a perfect science. I made a huge thing of mashed potatoes and two full bags of red potatoes that went in the freezer. Maybe I will throw a can of coconut milk in the curry when I reheat that sounds great, over rice.
