VEGETARIAN June 2011 OAMM Menu (OAMC, Freezer Cooking, Bulk Cooking, Power Cooking)

Welcome to the first Vegetarian OAMM menu and what a perfect time to release this vegetable-filled freezer delight. The official start of Summer is on the horizon and so many delicious veggies are at their peak.

Roasted Vegetable Quinoa

As a long time OAMM traditional menu vegetarian-converter, I’m grateful for the opportunity to share this original vegetarian menu for OAMM. And I hope you all enjoy the selections I’ve made for the month. I planned the meals around what is in season (and what you may be getting from your farmer’s markets and CSA boxes) as well as the holidays for the month. Several of the recipes will make great additions to potlucks and parties (essential for graduation month and let’s not forget Father’s Day brunches!) as well as delicious at-home meals.

Sample Label

These customized labels are designed specifically for the VEGETARIAN June 2011 Once A Month Mom Menu. They contain the name of the dish and serving instructions for preparing the dish on your serving day. They make preparation of the dishes hassle free and staying to your eating plan a cinch.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

 

Facebook Fan Party:

OAMM Facebook Fan Page Party – June 13, 2011, 9:00 pm – 9:30 pm EST – We will be able to chat via video AND messaging during the event through FACEBOOK! How cool is that? We will be talking about the current month’s menus, answer your burning questions about freezer cooking and have fun getting to know one another. You can also see other past recordings from that tab as well.

Instructions for viewing live-stream:

  • Go to the Once A Month Mom Facebook Fan Page.
  • Click on the “Facebook Fan Page Night” Tab on the left side margin.
  • Hit “view live recording” – If I am live streaming it will show you what is happening in progress. If I am not live streaming at the time, you will have the option to click through other videos that I have recorded in the past.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cooks:

  • Margaret Done – I’m a mom of a preschooler who spends my days teaching in a prison and my nights teaching cake decorating and hanging out with my family.  I’ve been cooking all my life and love spending time teaching my daughter how to cook and bake.

    SO excited to try this! Converting recipes gets tiring, and with 4 kids 6 and younger, I need all the “easy” things I can get! Thank you so much!

      Jennifer – There are some great easy recipes here! I can tell you my daughter LOVED the cheesy chickpeas and broccoli – I was so surprised she ate it up! She kept saying “can I have more of these meatballs?” (the chickpeas).

      The french toast was a huge hit too. We modified the buffalo wings to BBQ wings and she surprised me by eating that all up too!

      It’s really nice having it all in the freezer just waiting to be eaten!

    Oh wow! I’m so glad I can help and I bet you do need “easy”…I get tuckered out with my 2 under 3. And I know what you mean about converting, tiring and it can fail miserably, too.

    I am having trouble opening/viewing the vegetarian menu for June. Each time I click on the link, Google docs opens and says that the URL cannot be found and the author may have deleted the link.

    Any tips or suggestions?

      Occasionally Google has a hiccup. I tried the links to the printable recipe cards and that was working for me. If you were unable to access another document let me know and I will check into that one too. Hopefully Google will be working again when you try again.

    this is so helpful! Now, to figure out how to alter this for my vegetarian, gluten/dairy free, and on Weight Watchers family….LOL!!

      Hah! That’s got to be exciting. The recipes marked with an asterisk (*) are already vegan, so those should be fine for your dairy free requirement. As for the gluten-free, as long as you substitute brown rice bread or your preferred gluten-free bread, you should be fine there (with, of course, gluten-free sauces, etc., as per labels). As for the weight watchers…shew…a lot of the recipes are relatively low calorie due to the lack of meat. If you’re eliminating the dairy, that would also go a long way toward calorie reduction I’m sure. Let me know if you need any help with adjustments and substitutions, I’ll see if I have any ideas. :) Good luck!

    I know this is late, but I noticed an error in the spreadsheet with the recipe cards. It’s on the “rice balls” page… the formula reads (the cell) x A5… but A5 is text, so I’m getting a #VALUE error… I’m going to just do the math myself on this, but just a head’s up:)
