I am absolutely in LOVE with the June menu. I may have to make it twice! It’s so much fun to be back in the swing of summertime. The garden is absolutely bursting with color and flavor and I’ve packed as much of that flavor as humanly possible into June’s menu. The delicious fresh fruits are insanely sweet and bursting with goodness right now, so I’ve included blackberry, apricot and pineapple dishes: Blackberry Oatmeal Pie BarsBlackberry Lime MuffinsApricot Yogurt Scones and Thai Pineapple Rice. And I haven’t forgotten those beautiful sweet and red onions, highlighted in: French Onion SoupOnion Rosti and these super awesome, super easy Freezer Bean Burritos. And, just to keep us all on our culinary toes, I threw in something to stretch those tastebuds, Vegetarian Pho, filled with fresh Asian flavors and veggies.

For a detailed explanation of what is involved in creating the vegetarian menu we have a post explaining it all. If you are new and not sure how to get started we have a wonderful series starting with 5 easy steps to get you on your way to once a month cooking. Good luck!

The links below are just so you can see which recipes are included in this month's menu. WE DO THE WORK FOR YOU! To see freezer instructions and adapt recipes to your family size see the RECIPE CARDS below.

Are you a person that likes to see the menus visually? Perhaps you should check out the June 2012 Vegetarian Menu via Pinterest to see the yummy goodness you will be cooking up on this menu. Not sure what Pinterest is all about, check out what Once A Month Mom has to say about it.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Stacey Lorenz - I’m a stay-at-home mom (former Latin teacher) to four kids (one-year-old twins, 6-year-old girl and 9-year-old boy).  I have a blog at SimpleIntheSuburbs.com.  We’re working on removing all processed foods from our diets this year.

Get Started

Are you new to Once A Month Mom or once a month cooking (oamc) in general? If so, you might want to spend a few minutes (or hours) on the Get Started Series. If you are in a real hurry to catch on we have written some simple steps for getting started. Welcome!

If you are feeling abundantly blessed and generous feel free to donate. :) And don’t forget you can always go back and use the June 2011 menu if you are looking for something different!

The link for the Vegetarian June 2012 OAMM Instructions is not there. It takes me to this link http://onceamonthmom.com/instructions-vegetarian-june-2012-menu/

    Thanks :)

Lol got another one for ya! Vege instructions, says not available. TD

  4. Robyn says:

I’m new to this. When the recipe says “flash freeze” do you mean to freeze on cookie sheets (and then later repackage) or what?

  5. Carrie says:

Do you have any suggestions for another fruit I could substitute for the pineapple? I don’t eat citrus fruits or pineapples. Thanks!

  6. Dawn says:

Unless I am reading wrong — when I am cooking for 4 — the baked potato soup recipe needs 4 cups of the mushrooms — but that recipe makes 8 cups. Are they used somewhere else?

  7. Aimee Bell says:

LOVE your website! It’s a lifesaver for this mama of 4 & healthy eater. I’ve looked for OAMC recipes & have struggled to find meals that are healthy & fit our dietary issues. Your site is what I’ve been searching for!! You rock! :)

    HELP!
I just stumbled across your site this morning and am SO excited you offer vege/vegan meal plans! I’ve been so jealous of my omnivorous girlfriends preparing their OAMC plans as I idly stand by to cook once a DAY…EVERY DAY! :)
That said, I am having a hard time pulling up the June 2012 Recipe Cards and manipulating them for my family of 6. IT shows as a read only document. I am signed into google docs, and was able to plug in the numbers for the shopping list-it’s just this one I’m struggling with.
Can’t wait to hear back! Thank you!
    Ashleigh

  9. Jennifer says:

I made the blackberry lime muffins and the bean burritos last month! They were delicious- will definitely add to my list of “regulars”!

  10. Anjanette says:

“House Seasoning” is listed on the shopping list.. I tried to find a reference to it on the website bus didn;t see anything. What is it? Thanks!

    • Kelly says:

Sorry that’s an error on our part, if you look at the recipe card it’s simply 4 parts kosher salt, 1 part each black pepper and garlic powder

      • Anjanette says:

Thanks, Kelly! The only other thing that I can’t figure out is what the asterisks mean next some of the items on the shopping list. The collection of items is pretty diverse (bean sprouts, French bread, sour cream, etc). I’m excited to try my first OOMM cooking day later this week and I definitely want to be fully prepared before I start! :)

        • Kelly says:

Sorry that means those are items needed on the serving day for those recipes. So you don’t have to buy those for your cooking day.
