VEGETARIAN November 2011 OAMM Menu (OAMC, Freezer Cooking, Bulk Cooking, Power Cooking)

Cranberry-Orange Scones
November’s vegetarian menu makes use of all those delicious autumnal and Winter vegetables; butternut squash and roasted root vegetables highlight the dishes. A savory and simple Chickpea Pot Pie will warm up your kitchen and your tummies on a chilly day, as will the Vegetarian Chili Shepherd’s Pie and Vegetable Chowder. And Cranberry-Orange Scones will make the perfect breakfast to pop out of the freezer on a busy holiday morning.
I won’t sugar-coat it, with all the roasted vegetables, this menu can be pretty intense. But, the best part for your cooking day is that, once the vegetables are roasted, five of the meals require no further cooking that day. Those meals have been designated with a ^^ symbol. In addition to those five meals with the ** symbol designating no cooking on the cooking day at all, that makes 10 meals total with only assembly after roasting your vegetables.
And the pay-off for roasting all those vegetables is amazing. The caramelized goodness that will come out of your freezer is sure to impress any guests visiting for the holidays. And you’ll only have to slave over your oven and stove one day for an entire holiday season’s worth of deliciousness.

Labels
These customized labels are designed specifically for the VEGETARIAN November 2011 Once A Month Mom Menu. They contain the name of the dish and serving instructions for preparing the dish on your serving day. They make preparation of the dishes hassle free and staying to your eating plan a cinch.
These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cooks:
- Shannon Majiros: I am a stay at home wife and mom, I have one child, Delaney; she is five and just started kindergarten. I have been freezer cooking for two years.
- Diane Matthews: I am an ambulance nurse and a lawyer — not a cook — at all. Oh, I make fancy special occasion meals that are great but, I have trouble making “meals” every night. I usually just snack, even at home. When I’m on my 12-hour ambulance shifts, I eat out for every meal other than the few pieces of fruit take. This method will allow me to have something prepared that is not “prepared food.”

I’m cooking this over the weekend! I used to do OAMC years ago, but have fallen off of it for quite a while. I know I’m changing the suggested structure here that suggests cooking this menu late in November for December food, it just sounds so yummy good and I had time today to shop for everything!

23 meals in the freezer! (We ate one pizza tonight, even the kids loved it!) Even with my husband as a cooking partner, we still have a few things to finish tomorrow! We do have kids underfoot, but what slowed us down was flash freezing space! (Freezer over fridge). Not enough flat surface to set everything down flat to freeze. Should be short tomorrow though! Wontons, scones, biscuits. Wonton filling is all made too.
Did your wontons freeze alright? We made the mistake of stacking, they deflated a bit in the freezer.
These have all been delicious! It’s so wonderful to be able to pull a healthy, tasty meal out of the freezer, and my kids have been up for trying lots of them. We all loved the vegetable chowder, the scones, the pizza, and the quinoa chickpea burgers.

Thank you so much for having such a wonderful veggie section. I recently started a freezer exchange with friends and your site has been so helpful. We exchange vegan food and since most freezer exchange sites tend to center around meat this has been a breath of fresh air.

We used this menu for our first OAMC try! It was a lot of fun!! A couple friend of ours came over and we ended up doing 30 breakfasts, 30 lunches and 30 dinners for each of the four of us!! I just finished the quinoa with squash! It was fantastic!!! Thank you for such a great menu!!!
