Wake Me Up Coffee Banana Smoothie
Need a way to start the day on the right foot? Maybe something a little sweet? Oh, and maybe some caffeine? These smoothies are a easy combination of bananas, coffee and coconut milk. Sweet enough to taste like a dessert yet light enough to still be easy on your diet. The coconut milk used is the coconut milk beverage which can be found in the dairy section with all other types of milk, not the pure coconut milk out of the can.

Ingredients:
- 2 medium Chiquita bananas
- 1 cup fresh brewed coffee, cooled
- 1.33 cup coconut milk
Directions:
Divide coffee and coconut milk in ice cube trays. Freeze until solid.
Freezing Directions:
Prepare individual serving bags by place coffee cubes, coconut cubes and frozen banana in quart size freezer bags. To serve, thaw until slightly slushy and blend together.
Servings: 2

Do you think almond milk would go ok in it
I was wondering the same thing about almond milk. But this sounds awesome. I think my husband would love it as will I after the baby arrives!
Almond milk would work fine but will change the overall flavor the smoothie.
How many ice cubes would that be for the coffee and coconut milk to prepare freezer bags? Thank you!!
For each serving, I ended up with about 4 cubes of the coffee and 5 cubes of the coconut milk.
Could you use something besides coconut milk to make the WW points lower?
You could use another milk type product though it will significantly change the flavor. Most of the flavor comes from the coconut milk. Also keep in mind this is not the full fat coconut milk but the coconut milk beverage. Almond milk would slightly lower the WW points but will give a different overall flavor.
I have a coconut allergy, so I’m not sure what coconut milk tastes like. What taste does it lose when substituting with almond? Sweetness?
I have not tried it with almond milk but the coconut milk does provide sweetness. You could certainly try with the almond milk and see what you think!

I have looked at Kroger and Publix, and there is *no* coconut milk in the dairy section – anyone have any suggestions as to where I could find it? I’m almost finished getting all the ingredients for next weekend’s big cook, and I really want that coconut milk! :-)
Have you tried looking in the dairy section near where the almond milk and soy milk is located? The brand I can find locally is Silk and is with all the other milk products. I can find it at various local grocery stores. If you are looking for the same flavor you could use the coconut milk from the can with a mixture of another milk but the true coconut milk is much more thick and rich than the coconut milk drink.
I don’t like Silk but the almond company makes coconut milk & it doesn’t have as many additives as Silk.

At my local Publix, the coconut milk is usually with the ethnic foods and/or the organic foods. Maybe try looking there?
Could yogurt be used in place of the cococut milk?
I would think so, you might have to add a little liquid though.
Why do you use coconut milk beverage and not real coconut milk? Does it make a difference?

Real coconut milk is much more rich and contains a higher fat content. It could certainly be used but you may want to add some regular ice/water to ensure it is not too rich or thick.
