Are you new to whole foods? Or a whole foodie, but need a quicker option for your big cooking day? The June 10 Day Mini Menu is made just for you!

What are Mini Menus? Mini menus are a fraction of the meals you would see on a normal menu and can be completed quickly and efficiently in a few short hours, in the evenings when you are preparing the meal for dinner or during small bursts of times like naps. Mini meal plans are designed for the busy family who wants freezer meals in their freezer but doesn’t have time to do a full months worth of meals. If you are new and not sure how to get started we have a wonderful series starting with 5 easy steps to get you on your way to once a month cooking. Good luck!

The links below are just so you can see which recipes are included in this month's menu. WE DO THE WORK FOR YOU! To see freezer instructions and adapt recipes to your family size see the RECIPE CARDS below.

Homemade Ravioli and Summer Squash

Dinners

Crunchy Coconut Chicken with Apricot Sauce (or Garlic Chili Sauce – take your pick!)

**Indicates meals that require NO COOKING on your OAMC BIG DAY aka “throw and go” meals, perfect for the family who needs to adjust to just do the quick meals!

Are you a person that likes to see the menus visually? Perhaps you should check out the Whole Foods June 2012 10 Day Mini Menu via Pinterest to see the yummy goodness you will be cooking up on this menu. Not sure what Pinterest is all about, check out what Once A Month Mom has to say about it.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Ginger Anderson – my husband and I both work full time, have a 10 yr old son and 7 yr old daughter.  This keeps us very busy!
  • Sharla Bowling-
I live on a working berry and vegetable farm with my 2 children and husband of 25 years.  We love to try new foods and recipes.  I am so thankful to have found OAMM – her recipes & planning has saved me time, money, and we are a fan of almost all the recipes here…..thank you.

Can the BBQ short ribs be made in the slow cooker? It’s way too hot to use the oven right now!

I would imagine so. I am going to experiment with that soon. I would say 6-8 hours on low or 4-6 on high. Let me know if you try it before I do.

This is great! I just had my 3rd child, like to eat whole foods and have been having a really hard time trying to find the time. But this saved the day! I’ve made everything but the ravioli (that’s tomorrow so my eldest can do it with me) and it all smells so good! We had the macaroni tonight- YUM! I will say it makes a bunch- I set it up for 4 people, but it makes enough for I’d say 6! That works out though, I just made the 2 dinners into 3 and we’re set for another week! I can’t wait to see the next Whole Foods 10 day mini list!

Question: My chopping amounts told me to slice 4 onions to make 5 cups, but I only see one recipe for onions (the ravioli) and it only asks for 1 cup. Did I miss something somewhere? Thanks!
