WHOLE FOODS August 2011 OAMM Menu (OAMC, Freezer Cooking, Bulk Cooking, Power Cooking)

No it can’t be! Summer is almost over? Where did these months go? Well one way it’s flying by for me is the beginning of each month we’re off on an adventure! This weekend my husband and I are jet setting east to the windy city, Chicago! We’re celebrating his birthday early with fabulous trip full of food, sightseeing, fun and baseball. If you have any ”must see must eat” locations, send them my way!

August is such a wonderful month to celebrate the harvest. It seems like all my favorite vegetables and fruits are finally ready! Corn, zucchini, summer squash, cucumbers, and TOMATOES! And the start of some root vegetables like carrots. Peaches are at their prime in August as well as raspberries, blackberries, plums and melons. This menu really embraces this harvest and is my attempt to stock your freezer full of great meals to extend this season into Fall.

These customized labels are designed specifically for the WHOLE FOODS August 2011 Once A Month Mom Menu. They contain the name of the dish and serving instructions for preparing the dish on your serving day. They make preparation of the dishes hassle free and staying to your eating plan a cinch.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cooks:

  • Angie Boyd - I am a part-time working mom of 2 boys–11 & almost 3 and 2 girls–both 9. I love to cook and this was actually the first time doing a OAMC.  It was a blast and I have some great things in my freezer.  It really will help since our schedules are crazy around here.  I love making new things.
  • Sarah Cook – Sarah is a fulltime working momma with a 2 year old and a husband who is in school fulltime.  Meal times typically find her on her own while her spouse is out, so freezer cooking has been a godsend.  She blogs at www.beingfrugalbychoice.blogspot.com about her favorite recipes, tips for living on a limited budget, stories of her silly/wicked smart toddler, and ideas on how to live a sustainable life on the cheap.

    This was so much fun to do. We have had a few of the recipes since I did the cooking (we’ve been out of town a lot) and we have loved them all. I’m going out of town for 5 days this week and I know tha the hubby and kids will be pulling out a few of the meals to eat while I’m gone. Thanks again for the opportunity to be a test cook

    Umm, I’m not sure the Sausage and Cheese Balls can be considered whole foods. The first ingredient is Bisquick.

      Actually – if you look at the recipe cards that we produce (printable recipe cards) you will see that we have an add on for you to make your own “Bisquick” thus making it whole foods. ;) We have you covered!

    My spinach and tomato quiche just came out of the oven, but I forgot to put the tomatoes on top! I noticed that in the directions it doesn’t mention to put the tomatoes on… I just wanted to bring it to your attention, because I think the tomatoes would’ve made a really delicious addition. I haven’t tried the quiche yet, but it looks and smells yummy!

    A bunch of the recipe cards printed funny. The directions are cutting of. It seems like maybe they’re posted all in one cell so I only see the first line when i print.

      You may have to do some adjusting in the Google docs before printing. There might be some overlap that occurs when copying the document. Sorry about that, this is the best method we have for sharing these types of documents with a mass audience that uses different platforms.

  8. Kelly, Are the carrot muffins really supposed to be mini-muffins? That’s what the directions say, but 1 tsp of filling is A LOT in mini-muffins. I had much more success with them as regular muffins, and they taste incredible!

    Hi Kelly,
    I am so loving this whole foods menu. I made the French toast recipe and found it very difficult to convert the decimal measurements. Some were given in the instructions, but some were not. Is there anyway to provide both the decimal and fraction conversion on the recipe cards or possibly the original recipe?

      (Tricia) Rikki, for the sake of the Google Docs and all the calculations that occur to facilitate the recipe cards, we do list ingredients in decimals. We don’t do fractions in the original post because it takes more time and between posts, recipe cards, etc, it is just too much. There are several “calculators” you can get on your phone or on the web that help with these conversions. And the recipe cards do list some. It is best to use the recipe card list and go to the measuring device that most closely matches. Sorry for the inconvenience.

    I’m confused about the Zucchini. On the shopping list, for 3 servings, it says to buy 6 zucchini, but on the chopping list, it lists zucchini twice.

      There is zucchini in both the zucchini cakes and the summer chowder. The cakes call for zucchini to be shredded the chowder calls for it to be sliced. Therefore in your choppping list it’s divided to help with prep. Does that help?

    I made the quiche last night and we loved it, although I might use fewer potatoes next time. The directions say the quiche can go straight from the freezer to the oven. Is that right? No need to thaw? Thanks!

      Yes you can cook it from frozen just be sure to check it often to ensure it’s heated thoroughly.

        I followed the directions and my “reheated” quiche ended up coming out completely solid. My oven temp is correct, it was preheated, all of that. I will NOT be reheating it as the directions say next time since it’s now past dinnertime and I have not been able to eat. I just wanted to make other people aware of that.

          Amanda I’m sorry that happened to you. Please know that oven temperatures DO vary and that’s why it’s handy to have an oven thermometer. I found that my oven was off by 10-15 degrees in some instances. Our test cooks didn’t report any issues, so again I’m sorry that you had trouble.

    So far this has been my favorite month! (I do both Traditional and Whole- some from both)Hubby’s too!!
    the sausage cheese balls-YUMMO! so super easy too! (I put too much pork in though); Quiche– I had a lot of potatoes left over– just did enough to cover pan– will add more next time! French Toast- OH BABY!! I actually had to make it fresh though- the bread that I had (I sotre bought- was moldy and just used what we had on hand) but mmm good! and the Carnita’s!! WOOHOOO! (I got a little overzealous with extra Adobe sauce so they were a little spicy– but edible!)
    Going to make the Chicken on sunday- made a booboo and frozen my chicken prior to cook day– along with my flank steak! DOH! so I will have to make pinwheels another day!
    Thanks for all your hard work! can’t wait til Sept 1st!!! only a few more days away!!

    This is my first time trying OAMC and it’s a doozy! I shopped and chopped (well, I got started chopping) on Saturday and started cooking on Sunday. It’s Monday and I have a ways to go. I had a hard time with the Artisan bread since I used whole wheat flour. It takes a serious knack to get that right the first time and it seems as though it would be tricky to make french toast out of the artisan bread. Also, I know the recipe doesn’t actually call for it, but it might be good to put syrup on the grocery list since it’s needed for the french toast.

    I think hoisin sauce was left off the grocery list, as well.
    My main critique would be to say that it’s tough as a mama of two under two to do this all in one day. Some of the veggies that I chopped on Saturday had to go in the trash since they got a little funky (the corn cobs, the cabbage, the cilantro). I guess I was a little pie-eyed thinking I could accomplish this all in one day. I bet I could if I had a babysitter.
    Anyway, thanks so much for putting this all together! It’s my first attempt at making so much food from scratch and I’m an artisan bread convert…I just need to figure it out, first. :)
    BTW, that roasted chicken was delectable. I made it with mashed potatoes and I opened up a can of gravy. No one ate the canned gravy…we all used the yummy chicken juice on our tates. mmm….chicken juice…

      Linda thanks for your candid response. The artisan bread recipe isn’t meant to be made with WW flour. There is another recipe for the bread using WW flour that I have not posted but it’s in the other book Healthy Artisan Bread in Five Minutes a Day. Using WW flour straight as a substitute in the recipe I posted will not work as well the chemistry will be off balance. If you make your loaf long enough you can easily make the french toast with the artisan bread. I did not include maple syrup on the grocery list because it’s assumed that it’s a pantry staple, or that some people do not like it on their french toast and prefer jam or powdered sugar. I’ll check on the hoisin sauce. As for the corn, cabbage and cilantro, I don’t know what happened but they should have lasted more than one day cut. We do recommend in our FAQ section and first time cooking post that you have someone else watch your kiddos so you can accomplish it in one day. It is not recommended to OAMC with kiddos at your feet unless they’re there to help! I’m happy you enjoyed the recipes though and I hope you enjoy your meals throughout the month!

        Hey, thanks for responding. I didn’t read the FAQ section…or did I? IDK. Gosh, I WISH maple syrup would just stay in my frig. I think my husband drinks it when I’m not looking or something. No really, I think he does. IDK what happened with the corn but I just chopped two other cobs I had on hand. I think the cabbage and cilantro were kept at a temp that was too high. I turned up the freezer since I was putting so much warm food in and I forgot to turn it down. The cabbage was only half funky. The stuff underneath was still good and I made some cole-slaw with it. The salmon burgers didn’t work out for us because we bought frozen salmon and I missed out on the hoison. So, it’ll keep just fine until we can get the hoisin sauce and I’ll just make it fresh. It’s not a loss by any means, I’ll just have to do things differently. Thanks again. My family and I really enjoyed the menu and I’m really digging the vegetables in our diet. It’s been awhile since I’ve had the confidence to take on cooking from scratch and it feels so nice to be back.

    I made the Sausage and Cheese balls this morning – they are so good! My supermarket didn’t have anything but the spicy pork sausage, so I found a seasoned chicken sausage instead – it didn’t crumble but worked well diced into small bites. I used basil since I’m not a huge fan of rosemary and they were deelish!! Have to go buy more sausage and make another batch, these won’t last long :)

    Your menus are always amazing! I just wanted to let you know that the Carrot Muffin spreadsheet is incorrect. It calls for 1.5 cups of sugar for the batter (and then another .5 for the filling), but the recipe only calls for 1 cup (and another .5 for the filling). They still taste good but are kind of sticky and spread.

    First time doing this and was cutting my veggies last night when my hands started hurting so bad. I realized it was from the chiles. I didn’t even think to protect my hands when cutting these up. They are still hurting this morning. Any suggestions on how to stop the burning?

    for the tortillas…it says to cut the amount in half for the breakfast burritos. i’m not seeing them on the menu. am i supposed to be saving them for another month?

    I’m guessing that most people aren’t looking through the old menus, but if others are, just so you know, I think that the pinterest link is broken. I’m planning to make this menu this weekend – I think it will go over better with my family than the 2012 August menu. :) thanks for an amazing resource!
