Happy New Year! Welcome 2012! I’ll be hunkered down with a newborn at some point this month, so I’m very thankful for a full freezer of meals that I’ve been prepping over the last few months. This menu is truly unique in that YOU the readers told us your favorite Whole Foods recipes and we created our All Star Menu for the year. There will be un-seasonal items on this menu, but I tried to keep in tune with things you could get in the frozen food section if needed. This menu is a great getting started point as well for Once A Month Cooking!

The menu lists veggie bean burritos and spaghetti pie yet those are not included in the instructions. Menu does not list the flank steak and buttermilk chicken which are included in the instructions. Can you clarify which ones are on the grocery list? Thanks! :)
Well, apparently it was missing from the cards and grocery lists too so we are working on fixing that right now! They will be added to the instructions momentarily.

This is amazing. I have been doing menu planning for a month, and this week I’m working on cleaning out my pantry and freezer… maybe next week two. After that, I think I’m going to buckle down and do this entire menu. Thank you for providing all of this! It seems so daunting at first, but knowing that you’ve supplied instructions and everything makes it seem like it might be easier than I thought.
i have downloaded the recipe cards to excel but most of the directions just come up with pound signs. is there anyway i can get the directions for the dishes.

I recently found your website from the suggestion of a friend. I’ve never heard of doing freezer cooking, but have been doing meal planning in 2 week blocks for the past 2.5 years. I love this idea and can’t wait to prepare this entire menu next week. I was going through the grocery list and I don’t ever think I’ve heard of tomato paste sauce. I’ve heard of tomato paste and tomato sauce, but not the both together. Could you please clarify and tell me how to find it:)
Welcome Amanda! We hope you enjoy the site! It’s tomato pasta sauce listed on the grocery list. Usually I have you make your own pasta sauce but there were some time constraints so I decided to list it on the grocery list. Then in addition to the pasta sauce, you need tomato paste for the sun-dried tomato stuffed chicken, and the tomato sauce (plain) for the Buffalo BBQ Chicken. Hope that helps!
Thanks Kelly for the clarification. I’m sure I just read it wrong. I just had baby #2, a little girl, last friday on 12/30 and I guess my eyesight must be going:) I get it now!! Can’t wait to get rolling on this menu.

I’m loving the looks of this month’s menu. I noticed that sour cream and feta are missing from the grocery list. I cross-checked before I shopped. Also in the instructions it mentions making “Alfredo sause” I didn’t see any recipes with alfredo sause so I will skip this, I’m hoping it’s just a typo. Also, for 2 people I will need a total of 12 tortillas. the recipe calls for 12 cups of flour…isn’t that a lot??
Is it safe to substitute a loaf of breadmaker whole wheat bread for Artisan bread??
Also- I’d be glad to share whole wheat recipes for tortillas and pizza dough for the future if you’d like…
Heather – Thanks I added the sour cream and the feta to the grocery list. The Alfredo Sauce is a typo. That line shouldn’t be on there. (Pregnant brain!)
And that does seem like a lot of flour, but that’s all they mostly are is flour and butter. You need tortillas for the Quesadillas, Chimichangas and the Veggie Bean Burritos. For two people, 12 is correct but they’ll be burrito sized so about 9″.
You can definitely substitute your bread maker whole wheat bread for the french toast and the spinach feta bake.

Heather, I substituted homemade whole wheat bread and it went great! It was easier for me than the artisan bread to make (I have a 4 month old and a two year old so my schedule of cooking is determined by them.)

This is the first time I am attempting this! In looking at the grocery list, I did not see Ricotta Cheese for the pancakes. Am I missing something?
It’s not on the grocery list, it’s further right on the recipe cards tab, we have you making it yourself! But you can buy it if you’d like.
We just finished our first ‘BIG DAY’ using your site. It was a team effort between me and my husband. We have two children under 2 so it took us about 11 hours to complete the whole thing with lots of interruptions. I have been freezer cooking for a few years now (mostly swapping with friends). However, I don’t think I have ever had a lineup as delicious as we have in the freezer right now. Thank you so much!

OK, I am sorry! Its probably staring me in the face again, but on the menu above I do not see spinach feta bake. I do see this in the instructions. Are the ingredients on the grocery list? Thanks and agian I am sorry! LOL! I am trying to figure this all out before I go shopping;)

I love this site. It makes meal shopping, prep and cooking so easy. I’ve gotten out of the oamc habit, and I’m ready to start again. Love, love, love the shopping lists. I noticed that now you can plug in the number of people you’re cooking for — however, I’m not able to change the number from 1. Am I doing something wrong? I suppose I could always do it the old fashioned way and multiply, but this seems so much more fun – and accurate.

Is it possible to just get the ‘dinners’ in the shopping list and instructions? Also, it would be VERY cool to have a list of dinners from all the menus…then be able pick a bunch and build a shopping list and print instructions.
I LOVE my freezer but it’s full of stuff I have to thaw, prepare and cook. I’m working to change that. Prepping and freezing items for a crockpot recipe would be GREAT! Got any of those? I’m adding you to my ‘favorites!’

I just finished my first OAMM cooking marathon and it was great. While there were some kinks (bought too much spinach and not enough tortillas) it went beautifully and my freezer is not STOCKED. I’m single and eat salads for lunch so these meals will last me a good month and a half to two months. Thanks for putting everything together!

I am *so excited* to find your website!!! I’m going to start with the January menu, even though it is February, because it’s a great match for what my family will eat.
It looks like I can buy the ricotta cheese instead of making it, and the same with the tortillas. I love, love that I can copy the spreadsheet for the shopping list and easily make my own changes.
One suggestion I have is for your spreadsheet. If you use $ in formulas that reference your number of people, it will make it so you can copy formulas to new cells without the reference changing.
So in the ingredient list, for example, the “number of people” is in I3. If you reference it as “$I$3″ then it will stay I3 no matter where you copy formulas using it in the ingredient list, which should make your creation a lot easier.

I’m having fun modifying the plan to work for our family — you make it so easy. I have a few questions I’d love input on.
I think I’ll go with store bought bread as well as the tortillas. It looks like for 3-4 people, I’ll need two loaves (16 slices for the french toast and 8 cups for the tomato bake) — does that sound right?
I need to substitute out the blue cheese in the BBQ chicken with cornbread topper as we can’t eat blue cheese. The original recipe had a comment that someone used feta…I was thinking sharp cheddar. What do others think?
The turkey is listed as twice as much in the “Chopping Amounts” (.5 lb per person) in the recipe cards than it is in the Grocery worksheet and the recipe itself (.25 lb pp). I couldn’t find it anywhere else in the recipes, so I’ll go with the smaller number? (I’m going to substitute sausage for this one).

Hi Lisa! Yes you can buy store bought tortillas, and yes two loaves should be just fine. I would substitute cheddar for the blue cheese in the Buffalo BBQ Chicken bake, feta wouldn’t taste right. I’ll have to look at the turkey amounts but I think you are correct.
Not a big deal, but the link for “Vegetarian Bean Burritos” doesn’t go to a recipe anymore. (I was just going to check the original because it seems like 1/3 teaspoon cilantro for 8 servings is not much…I think I’ll use 1/3 of a cup :) My son is not big on vegies, so I’m going to substitute 4 cups of rice for the onions, and extra corn for the mushrooms. Anyone that has made this before..do you think black olives would go nicely?

I finally finished my cooking “day” — really more of a cooking “week” but I’ll get more efficient, I’m sure. Also, I put in “4″ in my yellow box even though there are 3 of us, so it made extra. I posted a pic on your FB page.
I bought tortillas, ricotta, and bread, but I got 8 organic chickens on WF’s one-day sale, and I cut the skin, breasts and legs from all of them. A friend came over and showed me how to make chicken skin crisps which sounds gross but are very tasty — you season them and put on metal racks on a cookie sheet so that the fat all drips out. For the marinated chicken recipes, I used two breasts and a leg since I prefer the leg. I saved the rest of the breasts for the stuffed chicken recipe. Then I cooked the rest of the legs and the carcasses in crockpots and picked off all the meat. I got two cups per pound for the legs, and one cup per pound from the carcass. I can only buy organic chicken due to food sensitivities, so I figure I saved about $75 by using whole chickens instead of breasts, though it added a lot of time. If I hadn’t found the sale, it might not have been worth the extra work, I think.
I read the “prep” materials but didn’t really clean and organize enough, and now I regret that. I also didn’t finish my prep day in the first day, so I had to do some as I went. It ended up taking me about 3 days — one to shop and prep, and two very long cooking days. (And I still have cleanup and organizing to do of all the pans).
We can’t use aluminum either, so the only disposable containers I used were ziplock bags, and I re-use those anyway. I bought a bunch of Pyrex to supplement what I had(which meant I had to wash them all before use), two cheap pizza pans from Target, and a box of Hefty XL 2.5 gallon bags to store the pizza. What I did was freeze most dishes with a piece of cotton cooking twine in the container, and after it was frozen, when I was labeling, I ran it under hot water and used the twine to pop it out. It worked really well, and that way I have a baking or marinating dish-shaped block that will go right back into it’s container to thaw, and I’ll be able to rinse and re-use the bags a couple of times.
All in all, I’m tired but it was worth it!!!
