October is my FAVORITE month of the year! Mainly because it’s my birthday month and yes I like to drag it out as long as possible. A trait I’m sure I will regret passing on to my children in the future. I made the cupcakes above last year just for fun, aren’t they adorable?

Oven Baked "Fried" Chicken

I really love digging into the warm comfort foods of fall. Letting the oven warm up the kitchen and coming home to smells of squash, chili, and apples. This month’s menu embraces the flavors of fall. Using pumpkin throughout the meals. A chili and stew recipe for those football nights whether you’re watching the games at home, or in town and want something warm to come home to. And a few lighter recipes in case you feel weighed down like a pile of leaves.

These customized labels are designed specifically for the WHOLE FOODS October 2011 Once A Month Mom Menu. They contain the name of the dish and serving instructions for preparing the dish on your serving day. They make preparation of the dishes hassle free and staying to your eating plan a cinch.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

Test Cooks

  4. Just looking over the grocery list and getting ready to go to the store – do I really need 144 tomatillos? I know last month I bought 16 cups worth and really only needed 1.6 cups – so I don’t really want to overbuy again. Just wanted to check. And, 136 cloves of garlic? These just seem like insane quantities, so I wanted to check! Thanks!

      Laura – The cards should be fixed now you should only need 18 tomatillos total to make two batches. (8 people) And yes the garlic should be corrected now as well, however it is a lot of garlic for this month. For just one serving the recipe cards call for 15 cloves total if that gives you an idea. There are a few recipes that call for five cloves just for one serving.

  5. Also, just so you know – on the recipe cards – when I put in a serving of “8″ on the “instructions” tab but there are quite a few recipe cards that still say serving “1.” Just wanted to let you know.

  6. I’m sorry to keep commenting – I just keep noticing questions. I seems that the salsa verde recipe calls for ALOT of cilantro – but I don’t see cilantro on the grocery list at all. Am I missing something?

    thank you for this! i made a bunch of new dinners and a few lunches this week. my family LOVED it! even the spaghetti squash spaghetti you share. very strange at first, but so yummy! i think i can actually say, i can’t wait to go grocery shopping this week :)

    This is my first time trying the once a month concept and I only picked a few recipes and made ttwo weeks of meals. My husband I loved everything we made. I am hooked and ready to make my next batch of meals.

    I appreciate all the work it must take to put this together. And as it’s free, I hate to complain. But I do want to warn others to double check the grocery list and chopping list. I set it up for 5 servings and found some quantities off (Ground Beef – 6.75 lbs, not 4.4, Beef Chuck Roast – 3.75 lbs, not 30 oz, etc.). The chopped quantities show 115 medium (143.75 cups) of diced onion. I love onion, but that’s one cup of diced onion/person/day! So if it looks off, check it. And if it’s a critical or main ingredient, check it!
    That said, we really appreciate the whole food type of OAMC recipes. So many involve canned cream of mushroom soup, etc. These look tasty and healthy! Thank you for putting this together.

      Beth, I did check the cards for the errors you are reporting. There was a mistake with the onions which I have now corrected. I could not replicate the issue you are stating with the beef chuck roast. I got 30 ounces for 5 servings which equates to 1.875lbs. The ground beef did have a formula error which is corrected as well.

      We do want to reiterate that these cards go through a test cook process and editing.

    Thanks, Kelly. I’m in the middle of my cooking day but caught (too late) that the pumpkin loaf recipe listed makes 2 loafs for 5, not 4. Bummer! It looks tasty though.

    Hi! Silly question but I have never cooked with swiss chard and plan on making the goat cheese fritatta tonight for dinner. What part of the chard to I use, the leafy tops or the stems? Thanks!

        I made the frittata today, and I used more chard than the recipe said and I included the stems. I actually like chard stems but there is a trick. I find I have to slice/dice the stems really small, and I toss them in just a little after the onions, and then I toss the cut leaves in at the regular time.

        One comment I have in case this is used for future menu plans. This came out beautiful and delicious — but there is no way it is 8 servings unless you were serving it for brunch with lots of other things too. Even with double the chard and very large eggs, I divided it into 6 and they were still pretty tiny even served with a good-sized salad. Not a problem for me as I just had more salad, and I’ll probably freeze these 2 portions per meal.

        But if you think about it, 4 eggs into 8 servings doesn’t make a lot of sense for an entree. I would suggest that you double the amounts per serving in future meal plans, so that for each serving there is a whole egg (Two per person — since I assume this is meant to be eaten twice in the month like others). It still won’t be what most people think of as meal sized but will be a nice breakfast or brunch entree’ combined with a muffin, fruit, or a salad.

          Lisa – Thank you for the feedback. This was not one of my recipes so I was following the original post’s serving size. Our test cook for October didn’t comment on the serving amount so we didn’t alter it further.

    Hi there! I, also, have to add my heartfelt thanks for putting these menus together. This is only my second month of once a month cooking. I can already tell it’s totally changing the way I feed my family. One question about October’s menu, ( I didn’t do my cooking until mid-Oct so we still have a lot of meals from the Oct menu.) My question is – has anyone noticed any issues with the cooking times? Both the Monterey Chicken and the Garlicky Bean Enchiladas are still frozen at the end of the suggested cooking time. It doesn’t mention in the cooking instructions, but are these meals supposed to be thawed first? Are there any others where this is the case? Thanks so much!! Best, erin
