WINNER for the Anderson Seafood Giveaway! And Halibut w/ Lemon Dijon Marinade


As I mentioned earlier in the week, living in Colorado is tough with the lack of seafood and the price tag for the options we do have. It’s wonderful to have a company such as Anderson Seafoods. Easy online ordering of fresh, frozen, specialty, smoked and entree seafood delivered right to your door. The packaging is incredible and the customer service was also just wonderful. To really get a grand idea of all Anderson Seafoods had to provide, I received fresh and frozen mahi mahi and halibut filets, ahi potstickers, and shrimp stuffed poblano pepper to try out.

I’m pretty famous around my house for my fish tacos. I’ve tried to perfect a local restaurant’s recipe for years and just cannot get it right. And I planned to share with you the recipe until we had a minor mishap this week and I couldn’t get to them to provide you with a great picture. Stay tuned though, I’ll share very soon!

I did however experiment with my Anderson Seafoods fresh halibut they sent me and came up with this recipe:

Halibut with Lemon Dijon Marinade

Ingredients:

  • Two halibut filets
  • Juice of one lemon
  • 1/4 cup olive oil
  • 1 Tablespoon Dijon Mustard
  • 1/2 Tablespoon rosemary
  • 1/2 Tablespoon garlic, minced
  • Pinch of salt
  • Pinch of pepper

Directions:

Mix all marinade ingredients into a bowl and whisk until blended. Place in a freezer bag with halibut filets and let sit in the refrigerator for at least one hour. Preheat oven to 375. Place filets onto covered baking sheet and cook for about 15 minutes until firm to the touch. Serve over risotto rice.

Freezing Directions:

Combine all ingredients into a gallon freezer bag and freeze until ready to serve. To Serve: Thaw. Preheat oven to 375. Place filets onto covered baking sheet and cook for about 15-20 minutes until firm to the touch. Serve over risotto rice.
